On Thursday, in New Orleans, Chef John Folse will attempt to overtake the world record holder (himself) in the category of largest mac and cheese dish by combining cheese produced by the Cabot Creamery Cooperative with other fine ingredients to make 2,100 pounds of the creamy, calorie laden concoction.

This little event to benefit local nonprofits seems to have brought cooperating partners out of the woodwork. For instance 400 members of the National Association of Housing Cooperatives, in NOLA for a conference, plan to march to the event to express their support and, one would assume, sample the goods.

Magnolia School, a nonprofit organization that provides assistance to adults with intellectual or developmental disabilities, is providing homemade bowls to eat it out of.

Cabot Creamery, located in Cabot, Vermont, is owned by 1,200 dairy farm families. We love this little story because it involves so many in setting the table for affordable housing.—Ruth McCambridge
